As if you hadn’t already heard, we were fortunate enough to host Dr. Hans Diehl, the founder of CHIP, here in Rochester at the end of April!
During his week-long stay, he spoke at a variety of our Community of Wellness Health Fair events put on by the Rochester Clinic and the Lotus Health Foundation. One of the most talked-about events was the Community Wellness Celebration Banquet Dinner where guests dined on a 3-course meal featuring an array of whole food, plant-based fare. The menu consisted of the following dishes:
· Raw zucchini cannelloni w/ almond pâté & marinara sauce
· Artichoke & mushroom crostini
· Cucumber rounds w/ cashew cheese tapenade
· Butternut squash bisque shooters
· Sweet 'n sour tofu skewers w/ garlic mushrooms & pineapple
· Semi-dried tomato & macadamia cheese salad
· Roasted cauliflower w/ caraway seeds
· Risotto w/ spring vegetables
· Chocolate cream pie w/ a pecan crust
We think it's safe to say that guests got a first-hand look (or should we say taste) that proved plant-based food doesn't have to be boring and bland food! Note: we plan to have the recipes posted on our blog soon, so stay tuned!
In addition to keynote speaker Dr. Diehl, the audience first heard from acclaimed Blue Zones speaker Tony Buettner. The concept of Blue Zones, coined by Tony's brother, Dan Buettner, emphasizes nine common denominators among the communities in which the world's longest-living people reside. (You can learn more about the "Power Nine" that Tony talked about here: www.bluezones.com/2016/11/power-9/ ). Simply put, the idea is that practicing lifestyle medicine can lead us to build a community with findings like those discovered in Buettner’s research.
In the chief presentation given by Dr. Diehl, he noted the importance of preventing and reversing chronic illnesses through lifestyle medicine practices. This means a diet comprised of whole, plant-based foods, along with moderate exercise and stress management. Through these lifestyle modifications, people can improve their health and add years to their life. Yes, years!

All in all, we hope attendees were able to walk away with new knowledge surrounding the powerful effects of lifestyle medicine and feel inspired to take action. We believe that by applying these principles to our lives and the lives of those around us, together we can make our community a healthier and happier place.

PlantPure Nation, yet another noteworthy documentary created by the same producers as Forks Over Knives, provides this trusty companion cookbook boasting 150+ plant-centric recipes. It’s also filled with tips, tricks, and grocery lists for people interested in a whole food, plant-based diet.
4. Plant-Powered Families: Over 100 Kid-Tested, Whole-Foods Vegan Recipes
Inspire healthful, plant-based eating among the whole family with this must-have cookbook from Dreena Burton. From delicious school lunches to appetizing on-the-go snacks, this book supplies more than 100 kid-tested and approved recipes and serves as an excellent reference for parents raising young ones on a whole food, vegan diet.
5. Crazy Sexy Kitchen
Don’t let the risqué title of this one deter you. Author and cancer survivor Kris Carr attributes her triumph over cancer to her lifestyle changes, most especially her diet. After embracing a diet made up of whole, plant-based foods, she soon discovered the transformative power of nutrition and felt better than she ever had. This cookbook offers 150+ recipes that includes everything from fresh-pressed juices to delectable desserts.
